The general practice when you open a restaurant is to specialise in one area of cuisine. Curry, Pizza, Pub food etc. This is a way most of the industry has done things over the years and it has often been successful. However the world is changing. Tools like the internet, social media and smartphones are opening up new lines of communication on a daily basis and information is more readily available in today’s world than ever before.

As such the concept of ‘infusion’ has gained popularity. People want something different, something new. Therefore the idea of taking what works from two genres and combining them into one to make something innovative and new is one many people find attractive in the 21st Century. Thai Fusion Food

The concept of the Gastro Pub is in and of itself one which combines two elements. It combines the feel and atmosphere of the traditional pub with the classic style of a restaurant. The success gastro pubs have enjoyed shows that this concept is one that is welcome and successful in today’s modern dynamic industry.

Therefore it makes sense that we do this with food. The very art of cuisine is about experimentation. You don’t create a new dish out of thin air. You take what works; leave out what doesn’t and experiment to come up with a winning formula.

This is what Thai infusion cuisine is. It takes what works from traditional Thai cookery and what works form other traditional cuisines and experiments to find how they can be combined into an even tastier dish. Naturally it’s a case of trial and error, but when you get it right, you really get it right.

You can use almost any other type of cuisine in this; Japanese, Chinese, Vietnamese, English, Italian Indian; the list goes on and on. The greatest innovations in infusion cuisine usually come from the sharing of ideas; from migration, from confronting and learning from people with other lifestyles.
